Wine Poached Pear Pancakes

These pancakes are super easy, but very fun! We used ready-made pancakes to cut the preparation time, but of course, you can use home made pancakes as well.

Ingredients

  • 6 ripe, firm pears
  • 1 bottle white wine
  • 3/4 cup packed brown sugar
  • 1 vanilla bean, split lengthwise
  • honey, blueberries, raspberries for topping

Preparation

Peel pears but make sure the stems are kept in tact. Core them from the bottom and scoop out seeds.

Place pears in pot with 4- 6 cups of water. Add brown sugar and wine. Scrape vanilla sees into pan, then drop in pod.

Bring to a boil, then reduce heat and simmer. Make sure pears are coated in liquid mixture by turning them throughout the cooking process. Cook 15-20 minutes until pears are tender but not falling apart. Remove pears with a slotted spoon.

Continue cooking the liquid until it is fully reduced. Pour over pears and refrigerate overnight.

Prepare home-made pancakes as you wish or prepare ready-made pancakes according to package directions. Slice one poached pear and heat in microwave to get it warm but not hot.

Presentation

Top pancakes with the poached pear slices. Pour warm honey over the pancakes and pears, then sprinkle fresh berries.
