Preheat oven to 200 degrees.
Use a metal or glass bowl to beat whites until stiff. Use a hand mixer or stand mixer. Gradually add sugar to the mixture. When peaks form, the mixture is ready. May take anywhere from 10- 15 minutes.
Use parchment paper and line baking sheet. Fill a pastry bag with the egg mixture and squeeze out desired formed amount while placing an inch apart on the paper. You can also just spoon the mixture on the paper.
Place the cookies in preheated oven, on the middle rack, and bake for 1.5 hours. Then, turn off oven and continue drying the cookies in the oven for 2 hours. Do not brown!
When finished, let the cookies cool, then enjoy with your favorite beverage. For storing, make sure they are cooled to room temperature before placing them in an airtight container.
