Cherry Mini Muffins
Ingredients
- 2 Tbsp milk
- 1 pkg Store bought cake or muffin mix
- 1/2 cup shortening (for icing)
- 1/2 cup butter, softened
- 1 tsp vanilla extract
- red cherries with stem attached
- 4 cups confectioner's sugar
Preparation
In a large bowl, cream together the butter, shortening, and vanilla. Slowly add sugar, preferably one cup at a time, making sure to beat well after each cup. Add milk, and continue beating until the icing is creamy and smooth. Store the icing in a covered container until you are ready to use it.
Spoon the icing into a pastry bag. If you do not have a pastry bag, create one with a ziplock bag and cut the hole to the desired size. The key is to be able to pipe the icing into somewhat of a "tower" that will accommodate the cherry.
Once the icing is piped, put muffins into the refrigerator for about an hour.
Take out the iced muffins from the refrigerator and place a cherry on top of each one. Serve immediately or store in the refrigerator.
