Cherry Mini Muffins

They are adorable, need we say more! Wonderful for candy bars, dessert tables, or simply beautifully arranged on a white plate. We recommend focusing your time on making a delicious icing and use an instant cake or muffin mix.

Ingredients

  • 2 Tbsp milk
  • 1 pkg Store bought cake or muffin mix
  • 1/2 cup shortening (for icing)
  • 1/2 cup butter, softened
  • 1 tsp vanilla extract
  • red cherries with stem attached
  • 4 cups confectioner's sugar

Preparation

Prepare the muffins as directed on package.

In a large bowl, cream together the butter, shortening, and vanilla. Slowly add sugar, preferably one cup at a time, making sure to beat well after each cup. Add milk, and continue beating until the icing is creamy and smooth. Store the icing in a covered container until you are ready to use it.

Spoon the icing into a pastry bag. If you do not have a pastry bag, create one with a ziplock bag and cut the hole to the desired size. The key is to be able to pipe the icing into somewhat of a "tower" that will accommodate the cherry.

Once the icing is piped, put muffins into the refrigerator for about an hour.

Take out the iced muffins from the refrigerator and place a cherry on top of each one. Serve immediately or store in the refrigerator.
