Baked Bird's Nests

Ingredients

  • 1/2 pound frozen shredded hashed brown potatoes, thawed
  • 1/4 cup onion, finely diced
  • 1 egg, beaten
  • 12 cup mini-muffin pan
  • butter to grease muffin pan
  • 1 pkg cream cheese (light or regular)
  • 1 jar black caviar
  • finely chopped fresh herbs

Preparation

In a medium bowl mix together potatoes, onion, and egg. Generously butter a mini-muffin pan. For each nest spoon 2 tablespoons mixture into the palm of your hand, squeeze out excess liquid, form into a ball and fit into a muffin cup pushing mixture up the sides forming a basket. Continue to fill all 12 muffin pans.

Bake on bottom rack of oven at 400* for 40 minutes. Wait for nests to cool.

Empty the container of cream cheese into a bowl and spoon out a portion of cream cheese and roll into a ball that will fit inside the nest. Roll the cream cheese ball in the fresh herbs. Place the herbed ball into the nest and top with a small dollop of black or red caviar.
