Easy Smoked Salmon and Potato Appetizers
Ingredients
- Small Potatoes
- Smoked Salmon
- Diced Red Onions
- Cream Cheese
- Crème Frîum;che
- Capers
- Red Caviar (optional)
Preparation
Boil potatoes whole and unpeeled. When they are done, remove from stove and place to cool. When cooled, cross-section the potato into thick circle pieces. Unless you prefer otherwise, keep the skin on -- it helps with the presentation, adds texture, and is packed with vitamins.
Add a small dollop of cream cheese and pile a small piece of smoked salmon on top of the potato. Add a touch of creme fraiche and sprinkle with red onions, capers, and some red caviar... delicious!
