Chocolate Covered Cheesecake Stuffed Strawberries
We've taken the chocolate covered strawberry to a whole new level, one that you will thank us for again and again! This is a wonderful recipe for chocolate covered strawberries stuffed with a delicious cream cheese filling. I guarantee, you will be in love!
Ingredients
- 1 carton large strawberries
- 1 pkg semi-sweet chocolate chips, chunks, or chocolate flavored candy wafers (available at Michael's or Hobby Lobby)
- 1 pkg cream cheese (softened)
- 2 tbsp unsalted butter (melted)
- 1 tsp vanilla or almond extract
- 1/2 cup powdered sugar
- 5 vanilla wafers
Preparation
Wash strawberries and pat with paper towel to dry thoroughly.
Cut off the tops and scoop out some of the strawberry. Leave approximately half of the strawberry in tact.
In the meantime, melt chocolate in a double boiler. When chocolate is ready, dip each strawberry in the chocolate and place on a cookie sheet covered in wax paper. Once all strawberries are dipped, place in the refrigerator for 20-30 minutes.
To prepare the cheesecake filling, mix cream cheese, butter, vanilla or almond extract and powdered sugar in a mixing bowl. You can use a mixer or mix with a fork or spoon until smooth.
Once the chocolate on the strawberries has "set", take out of the refrigerator and get ready to fill them with the cheesecake filling. Use either a spoon or a pastry bag to fill the strawberries.
Once all strawberries have been filled, sprinkle vanilla wafers or graham crackers on top of the strawberries. Serve immediately or refrigerate for up to 6 hours.
Presentation
These strawberries are stunning. Serve them on a white planner to bring out all the colors in the dessert.
