Rainbow Sangria
This is a fun drink for St. Patrick's Day because it has the "rainbow" look. However, this drink is perfect for any lunch for spring and summer! It is refreshing and the champagne soaked fruit are wonderful as a dessert!! For an non-alcoholic version, you can use 7up (or sprite) or diet 7up
Ingredients
- 5-6 Large strawberries
- 1 can Mandarin oranges
- 20 grapes
- 1/4-1/2 cantaloupe or pineapple
- 20-30 grapes
- 1 bottle champagne
- 20-30 blueberries
Preparation
In a large pitcher, create layers of fruit to mimic a rainbow. You can use any fruit you like, non just the fruits I listed. Other fruits include pineapples, kiwis, or whatever you choose.
Once your fruit layers are created, fill the pitcher with champagne. Leave in the refrigerator for 4 hours or up to overnight. You can serve the champagne with the fruit on the bottom of the guests' glasses. Or, strain out the fruit and serve it separately for dessert. The fruit is soaked with champagne and id delicious!
